Stilson Cellars gave us a welcomed reason to venture off the downtown square, not even a full block. Just around the corner from the Hotel Cheval is a new place to find an array of delightful wines, olive oil, and a lovely patio. The family winery really respects my favorite adage that every bottle tells a story. The friendly smiles and patio made us stay till closing time.
Stilson Cellars Merlot
Their flight began with an easy drinking merlot. Not that merlots are hard to drink. But, this one’s mellow body and soft tannins made it pleasant for all palates. A bright cherry and berry aroma awakened my palate; a mellow body of cherry, berry, and plum followed with soft tannins and a hint of licorice with slight pepper on the broad mouthfeel. It’s long finish and array of textures begs for a full plate of food but its mellow easy drinking character makes it a delight all on its own. If you’re already a fan of this grape, its individuality will impress you. If you are not a fan of merlot, this one’s unique characteristics may make you one.
Stilson Cellars The Return
Named after their return to Paso from parts south, The Return is a blend of mourvedre, grenache, and syrah. Unlike the typical Rhone blend (GSM), it has more mourvedre than the other two grapes. But, like a GSM, it begins with a bit of earth that leads to a slightly chewy texture with a hint of bramble on the finish.
Stilson Cellars Aware
At a time when we all need to open our eyes to mental illness and suicide prevention, Stilson Cellars is doing something about it. They’ve named this lovely bottle of zinfandel Aware in honor of a cherished family member and adorned with powerful art work. To highlight its importance, the family donates half of the profits to the National Alliance on Mental Illness. This bottle is a keepsake to use as a vase or fill with a string of lights after you savor the succulent nectar.
Stilson Cellars Chrome
A lovely cab from 2018 lured me in with blackberry and ripe plum aromas intermingled with greenery like sage and eucalyptus. It opened wide across the tongue with tart acidity and tannins that were well integrated, giving it structure and complexity without overpowering.
